Many people say that most popular slovak meal is „Bryndzové halušky“ (Gnocchi with sheep cheese and fried bacon), but I prefer dumplings filled with sheep cheese.
Dumplings filled with sheep cheese are very tasty with cream and spring onion on the top. They are best with our national drink “žinčica”

Ingredients for homemade Dumplings:

raw materials for the dough:
500g of semolina flour
pinch of salt
if necessary lukewarm water
  potato filling:
3pcs potatoes
salt
crushed rasca
3 tablespoons of butter
ground black pepper



Recipee for delicious home-made dumplings
Peel the potatoes, cut into cubes, add some crushed raisins and salt and boil till soft. Use the cullender and move them to another bowl, add butter, stir a little and add black ground spices or salt to the taste. Let it cool down. Now using flour, pinch of salt and some lukewarm water, which we gradually add to the flour, start making a sweet dough. If you accidentally pour too much water, simply add more flour. From the made dough extract  1/3 (put the rest into a micropren sack so that the dough does not dry up) and roll thew dough on a moulding plate. Cut the longer patches with a knife, then make smaller squares (you can even go for larger ones). Stuff in with the potato and jam filling.
Dumplings are improved by folding the opposite corners and pressing down the fingers. If the dough is not too sticky, the inner edge of the square is covered with water and then firmly sticks together (this ensures that it will not disintegrate when cooking the filling). Put the dumplings on a padded cloth and cover them with another cloth to keep them dry. Repeat the process with the rest of the dough.
